Pudhina Rice - Mint Rice



Pudhina Rice - Mint Rice




Preparation time: 5 minutes
Cooking time: 10 minutes


Ingredients

1 cup basmathi rice
1 onion
1tbsp curd
1 cup coconut milk
Salt
1tbsp Oil/ghee

 Make a smooth paste

½ bunch mint leaves
3 green chillies
1tsp ginger-garlic paste
1 clove
1 cardamom
1 cinnamon

How to make it

  • Wash rice and soak with 1 cup coconut milk and 1 cup of water for about 15-20 mins.
  • Grind the items given into a smooth paste by adding little water.
  • In a pressure cooker heat oil/ghee fry onions till it becomes soft.
  • Then add the ground paste. Fry till the raw smell goes off.

  • Add curd and mix well. Now add the soaked rice along with coconut milk and water. check for salt.
  • Pressure cook for 1 whistle and then simmer the stove for 5 mins.
  • Garnish with fried cashews and serve hot with onion raitha.






PS:
In this picture I have used some paneer cubes. If u wants to add any veggies add while frying the mint paste.  Green peas, mushrooms can also be used.
