Vegetable Biryani Recipe
Preparation time: 10 minutes
Cooking time: 20 minutes
Ingredients
2 cups basmathi rice
1 onion (length-wise cut)
1 tomato (finely chopped)
1 green chillie slit
½ tsp ginger-garlic paste
3-4 mint leaves
1 tsp chilli powder
1 tsp coriander powder
1tsp briyani masala ( can replace with garam masala)
1 carrot
½ cup cauliflower florets
1 potato
4-5 chopped French beans
½ cup green peas
Salt
Oil
Coriander leaves to garnish
To temper
2 cloves
1 bay leaf
1 inch cinnamon
1 cardamom
How to make it
- Wash and rinse basmathi rice. Soak in 3 cups of water for about 15 mins.
- Peel the outer skin of the potato and chop into small cubes. Clean the cauliflower florets in warm water with pinch of salt and turmeric powder. Chop other veggies too and keep aside.
- In a pressure cooker heat oil and temper with the items given.
- Fry chopped onions until translucent. Add ginger garlic paste and green chillie. Fry for some more time. add mint leaves and saute it well.
- Add the chopped tomatoes and cook until gooey.
- Now add the chopped vegetables and mix well. Add chilli powder, coriander powder, briyani masala. Coat the veggies with this masalas.
- Add the soaked rice along with the water. Check for salt.
- Keep for 2 whistles and 5 mins in low flame.
- Garnish with coriander leaves and serve hot with raitha.
