Lemon Rice
Another post for a easy and quick lunch box recipe. This is one of my favorite dish since it consumes less time. It goes well with any side dish, some times it doesn't need anything to compliment with.
Ingredients:
2 cups of cooked rice
2-3 tsp of lemon juice
1/2 tsp turmeric powder

1 tsp mustard seed
1tsp urad dal
1tsp chana dal
1-2 red chillies
1-2 green chillies
Curry leaves (optional)
To garnish:
Roasted Peanuts
Roasted cashews
Method:
- Add oil to a pan and add the mustard seeds followed by urad and chana dal. Take care not to burn the dal.
- Add curry leaves. Once the leaves splatter -off add red chillies and green chillies.
- Now switch off the stove and then add turmeric powder. This gives the traditional color for the dish. Adding too much of turmeric makes the dish unappetizing. Add salt to the content mix well and keep aside.
- To the cooked rice add the lemon juice followed by the mixture said above. At this time you can adjust the salt.
- Add the roasted peanuts and cashews and serve.
