TOMATO THOKKU

TOMATO THOKKU

My Very first dish I got appreciation from everyone. TH will go crazy whenever I make this and he finishes off it completely without even a trace
Ofcourse the source is from amma. She used to make this for each and every trip and we never complained for dat. I even used to take this along with rice for lunch.

This thokku will suit to anything as such like a pickle for curd rice and can mix with rice as for Instant thakkali sadham and also as a side dish for idlis, chapathis and all that. This can be even stored for a week or so.  Store this in a dry and clean air-tight container.

Preparation time: 5 minutes
Cooking time: 30-45 minutes

Ingredients

2 Cups Chopped Tomatoes
1tsp Mustard
2tsp Chilli Powder (adjust to taste)
1tsp Coriander powder
Salt
Oil

To Roast and powder

6-7 Red Chillies
2 tsp Coriander seeds (Dhaniya)
1/4 tsp Fenugreek seeds

How I made it

In a pan dry roast the items given under “to roast and powder” table. Let it down to cool. Then make a coarse powder in a clean, dry mixie. Keep aside.

  • Heat a kadai/skillet add oil. I prefer using sesame oil. Temper with mustard.
  • Add the chopped tomatoes.  Cook tomatoes in low flame with closed lid.

  • Once it is cooked soft add chilli powder and coriander powder. Cook for some more time.

  • Now add the roasted powder to the tomatoes.
  • Keep stirring with a spatula since it will stick to the kadai. At this time add salt. Stir till a pickle-like consistency is reached.
