Mughal Biryani | How to make Mughal Biryani Recipe | Mughlai Chicken Biryani Recipe
There are so many types of biryani recipes in my blog. But still
am not done testing and tasting the varieties of biryani in my kitchen. This time
I tried with something called Mughal Chicken Biryani which I grabbed from a TV
show. It was a special program on Ramzan which explains how to do Biryani for
Ramzan. They used mutton; here I switched to chicken for health concerns. The proportion
given here can very well serve 2 to 3 people.
I prefer using chicken with bones for biryani. It tastes
better which soaked in the gravy and cooked along with the rice. But TH likes
it to be boneless to make the job easier while eating. So here I used bonless
chicken breast and it depends on ur taste whether to use bone-in or out… and
also make sure you add enough oil, to avoid the chicken gravy getting burnt in
the pan. If u needs to add some more oil in the middle of the recipe, go ahead
and add. This gives the gravy, the unique flavor.
I served it with onion raitha and chicken tikka.

Chicken 65 Recipe
I was not a huge fan of deep fried items… and I rarely take
this Chicken 65 whenever I visit a restaurant. On the other side TH, a chicken
addictive always order this and makes me to taste. After marriage I came to see
a street food shop which serves chicken 65 with Idyappam!!! Weird right… even I
gave the same look to that… TH insisted me to taste that once, since he loves
it… though it was full of oil and lots of red food colors in it, I loved the
taste and also the combination of chicken with ldyappam. That weird combo makes
to go drool… *slurp*
After coming to US, we miss the shop and the combinations of
idyappam with that. TH started to crave for Chicken 65 these days and I tried
at home. It was super soft inside and crisper on the outer. I dint add food
color to make it more attractive, hence the color differences. I served it with Chicken Manchurian and with Chicken Fried Rice.

Chicken Manchurian | Indo-Chinese Manchurian Recipe with Step-by-Step Pics
Here comes my next chicken recipe for the weekend special
.
Manchurian has been my very first dish which I tried at home on amma’s
guidance. I got the recipe from one of my fren and tried at my home. Amma helped
me in deep frying the chicken and all that. She never allowed me to play with hazardous
in the kitchen… Soooo caring she seems to be
… but now I don’t have any option. I
need to take care of myself,
uhhhf!!!
My first dish was a great success and I passed some to my
aunt’s place and she was amazed on seeing me doing all this
...I don’t know wat wonder!!!
They loved the dish and my uncle cleaned and wiped off the box and returned
back for some more
…
You can use cauliflower or paneer to make a veggie version
of Manchurian. I served it with Egg Fried Rice and Chicken 65 (recipe soon).

Chicken Tikka Masala
After a long gap, a post on non-veg recipe and that too with
a chicken. It was almost a month I prepared non-veg at home. I got bored of
making it and left a gap in between for the NVs. And now the time arrived to
bug up with the recipes. In this post am
not gonna write more about chicken tikka since we had a blog post of it
previously. Click here to check out. Here am gonna make a masala out with the
tikka which we prepared already. If u have any left out tikka, you can use up
in this way and make a awesome side-dish for rice and rotis.

Garlic Chicken Recipe | Indo-Chinese Recipe
Chicken and Fish comes to my mind whenever I think for the
menu on every Sundays. And usually it will be Fish fry or gravy, chicken gravy
or fry when comes to the recipe. These routine recipes got to a boredom stage
and the idea
of making Garlic chicken struck me when we had an outing and the
friend of us prepared this garlic chicken. He made the chicken to perfection
and it was really sooper soft and awesome.
And yeah, I mentioned here “HE” isn’t
it???… That’s not a typo. The rule for the outing is all the guys should
prepare their favorite dish… and he was so kind enough to make two dishes for
us…
TH prepared Egg Fried Rice by himself and obviously I guided him for
chopping the veggies and for the preparation things. Don’t ask the story about
the mess up of kitchen after that … wofff!!!
Egg fried rice along with the
Garlic chicken was the highlight that day… Good old days!!!

Butter Chicken | Murgh Makhani
Butter Chicken or Murgh Makhani is made with the left over
tandoori chicken in mild-spicy and silky tomato gravy. Because of the
not-overpowering spiciness it is been loved by all, especially non-Indians. I
can see lots of ready-to-serve packs of butter chicken in most of the stores
here in US. They love to have the butter chicken with the plain tandoor naan
which is also readily available. It can also be served with jeera rice and I served it with
peas pulao.
You will be wondering, I haven’t tasted this butter chicken
in any of the restaurants until I make it myself. After looking at the people
here craving for butter chicken I thought of trying at home. The original
recipe has cream and I replaced it with few cashew nuts which give a creamy
texture to the gravy. Most of the restaurants uses tandoor chicken. Here am using
the shallow frying method to cook the chicken. You can also deep fry the
chicken. This is just a step to avoid the chicken oozing out excess water while
cooking with the gravy.

Layered Chicken Biryani | Chicken Biryani Recipe
Chicken Biryani!!! ahhh … I love to taste biryani in each
and every restaurant I visit. The first dish I order in a restaurant must be a
biryani… I love the way of Muslims making their biryani. Since I lived in
Triplicane area, we have so many Muslim neighbors and the day of ramzan it was
a treat to our eyes to check out the preparation of their biryani. I grew up
watching all this and finally tried it in my kitchen.
I have already a post on prawn biryani and mutton dum biryani. And here comes this chicken layered biryani.

Chicken Tikka
Chicken Tikka is one which I wanted to make for years and
now the time arrived. I always use to mention TH as a chicken addict.
He is the
one who helped me to do this tikka out so perfectly…
oops!!! Sorry, I should
say in the other way. I was the one who helped him a little in doing this!!!
Yes
this recipe is completely from his side.
The one, who never ever used to come
inside the kitchen, took this as a new venture in cleaning, marinating and
broiling the chicken.
And, I silently watched what he does and kept clicking the
photos for uploading. Hmmm!!!
How nice is it, if somebody cooks and u needs to
just click the pics alone... ahmm 
Tikkas are generally made in tandoor. But here we used the grill oven that we use for baking. We used the skewers to cook the chicken. This method doesn’t need much oil as we use for the normal chicken fries.

Chicken Fried Rice Recipe | Indo-Chinese Recipe
I already have a post on Eggfried rice which I learnt from my mom. Later I just tried the same recipe with
chicken and it came out really well. TH being a chicken addict loves it. I make
it twice in a month at least.
In this recipe I used Soy sauce and chilli sauce which are store bought. I followed the same procedure as I did for egg fried rice except adding this chilli sauce. The color of the rice is also because of the sauce. Adding tomato ketchup to the recipe is an optional, since I don’t like the flavor of it I skipped adding it. Using vegetables is also purely optional.

Chettinad Style Chicken Soup | Kozhi Rasam
For each and every meal we start with a soup variety and for
a non-veg addict like me chicken soup would be a whole-some treat. I like
mutton soup rather than the chicken. But, near to my place I don’t find any
shop for mutton with bones in it. A mutton soup won’t taste better without a
bone. So I switched to chicken. If u need to try mutton soup jus replace it. The
ingredients and the method are the same.
Always serve the soup literally very hot. The spices and the
pepper in it will give instant relief for ur running nose and cough. Check my other recipe for running nose.

Chilli Chicken | Indo-Chinese Recipe
Ah… wat to say about this yummy-looking chicken.
Nowadays am becoming
crazy on chilli chicken. We mostly buy chilli chicken from the near-by Indian restaurant
to accompany the plain brown rice and I came to know in most hotels they add MSG.
This insisted me to try this at home on a Sunday, without adding MSG. Instead
of deep frying I patiently shallow fried the chicken pieces. I served it with
Jeera Rice.

Coorg Chicken
Coorg Chicken
I don’t remember from where I got this recipe. When I was
searching for some chicken recipes in my diary I got this recipe suddenly out
in the middle of the page. This recipe doesn’t need the usual chillipowder,
onions and tomatoes. Just marinating and frying makes the dish extra-ordinary.
We
enjoyed having it with jeera rice and even the usual sambhar and rasam are the
best choice to accompany.
Preparation time: 2 hours (includes the marination time)

Chicken Kuzhambhu | South Indian Chicken Curry
Chicken has been TH’s favorite. If I make anything out of it
he will have it for sure. I have tried many other recipes and thought of
sharing this simple gravy as a basic.
This goes as a great combination with idli, dosa, idyappam, chapathi
as well as rice.

Chicken Hariyali Tikka
Chicken Hariyali Tikka
One of my favorite chicken recipe “Chicken Hariyali Tikka”. This can either be served as a starter or a
side-dish.
When I was in Chennai I tried this tikka in most restaurants and it really tasted yummy-delicious. I used to try this at home. Since I used a stove-top it consumed so much oil but still I couldn't able to get the perfect texture.
Since I have a grill oven out here I tried this recipe and it came out really well...
Preparation Time: 3-5 hrs
