Okras/Bhindi/Vendakkai/Ladies finger…. You can call it by whatever name u like. It has its own flavor. I sometimes like to hate it and sometimes hate to like it
I hate okra in my childhood as like most others. Amma wants to make me eat some way or other. She used to stir fry the okras with little of oil and adds lemon juice, pepper-salt to it. Weirdly, I love to eat okra with the sticky part in it.
When talking abt the health concerns about okras, we all knew it increases ur memory power of the brain. I’ve heard dat the slime part of this okra’s is the one which works on the brain to increase its memory. May be that was the reason for me eating the okra without removing the slime.
Woof… I have written lots about okra and now let’s move on to the recipe.
I served it with coconut rice.
Ingredients
500gms of vendakkai/okra/bhindi
1 tsp chilli powder
½ tsp turmeric powder
1 ½ tsp coriander powder
¼ tsp garam masala powder
½ tsp ginger-garlic paste
Salt (as needed)
Water (to cook)
Oil (as needed)
To temper
½ tsp mustard seeds
¼ tsp urad dal
¼ tsp channa dal
Pinch of hing/asofoetida
Curry leaves (optional)
Method:
- Cut the okras into thin slices and keep aside.
- In a pan heat oil and temper the items given. Directly add the chopped okra. Sauté it well in the oil.
- Fry for 1-2 minutes and add ginger-garlic paste. Mix well till the raw smell goes-off.
- Then add turmeric, chilli and coriander powder to it.
- Add half cup of water to the okra. Check for salt and cook till it turns soft.
- Serve with steamed rice.
How to get rid of the okra’s stickiness/slime:
- Wash the okra in clean running water and pat dry in a kitchen towel or paper napkin prior using it for the fry.
- Adding lemon juice helps to remove the slime of okra.
- Adding curd reduces the stickiness, but I haven’t tried it.
- Microwaving the okras for 1-2 minutes also reduces the stickiness.
- Cooking on high flame helps to reduce the slime.
PS:
Whatever method you use to reduce the stickiness I like to
have it as such with its own flavor. Its ur wish either to remove or use as
like dat.
