Ingredients:
1 cup of vermicelli
1 onion
1 tomato
½ tsp garlic chopped
½ tsp ginger chopped
1-2 green chillies
Potato, carrot, French beans, green peas
½ tsp turmeric powder
1-2 mint leaves (optional)
Coriander leaves, to garnish
2 cups of water
1 tbsp Ghee/oil
Salt
To temper
2 cloves
1 bay leaf
1 cardamom
Few curry leaves (optional)
How to make it
- Dry roast vermicelli in a kadai and keep aside.
- In a wok heat ghee/oil and temper the items given.
- Add the chopped ginger and garlic, fry till the raw smell leaves.
- Now add the sliced onions and cook till becomes transparent. Slit the green chillies and fry for 1-2 mins.
- Follow by adding the chopped potatoes.
- Add the chopped tomatoes and cook it turns mushy.
- Then add the veggies of choice with turmeric powder to it.
- Add 2 cups of water and allow it to boil.
- Once it starts boiling, add the roasted vermicelli to it.
- Cook in medium flame till it turns soft.
- Garnish with coriander leaves and serve hot with any choice of chutney.
