Chicken Tikka

Chicken Tikka is one which I wanted to make for years and now the time arrived. I always use to mention TH as a chicken addict. *smile* He is the one who helped me to do this tikka out so perfectly… ;;)oops!!! Sorry, I should say in the other way. I was the one who helped him a little in doing this!!! :-DYes this recipe is completely from his side.

The one, who never ever used to come inside the kitchen, took this as a new venture in cleaning, marinating and broiling the chicken.=D> And, I silently watched what he does and kept clicking the photos for uploading. Hmmm!!! 8-> How nice is it, if somebody cooks and u needs to just click the pics alone... ahmm *dances*

Tikkas are generally made in tandoor. But here we used the grill oven that we use for baking. We used the skewers to cook the chicken. This method doesn’t need much oil as we use for the normal chicken fries.

Puliyogare - Potato Peas Fry

This post was sleeping in my folders for months and I wanted to post it at least now. This is a ready-to-pack lunch recipe. Puliyogare/puliohare is something which is made out of tamarind paste. We can store the paste for weeks and there is no need to refrigerate it. I love the puliyogare which is prepared by Iyengars. The one, which is made in Triplicane Parthasarthy temple, is such a divinely food.

Amma makes it for most of the picnic we go, since it don’t get spoil very easily. The combination for this rice is definitely potato fry which most of u will accept. I just wanted to share both these on-the-go recipe and here it goes.

Bread-Veggie Cutlet | Instant Tea-time Snack

If u has a pack of bread in hand and you are bored on the same sandwiches and upma, here comes the savior. You can turn ur bread into a yum-sum tea time snack. You should not worry about the extra pounds ur gaining cos of this.

I had few slices of bread which is expiring the next day.  I don’t want to throw it away simply, so I used it in the usual cutlet as a binding agent instead of besan. These cutlets are really very soft. If u desires a crisper version, add 1tsp of rice flour. To make it much interesting u can put the patties in between the normal buns and make a veggie burger.

Mushroom Coriander Gravy

Indian recipes will never get completed without coriander leaves. I must say we are all addicted to the elegant smell of those leaves. The flavor and the tempting green color of it make the food very appetizing. So, we grind and take as chutney or at least we will incorporate to the dish as a garnish. It give the recipes a sooper-dooper final touch.

We buy the coriander leaves, chop the leaves and throw the stem of it. But the real flavor and the health benefits are coming from that stem, which we are not aware off. So I wanted to use the stem in this gravy and it turned out sooper delicious for chapathi.

Chicken Fried Rice Recipe | Indo-Chinese Recipe

I already have a post on Eggfried rice which I learnt from my mom. Later I just tried the same recipe with chicken and it came out really well. TH being a chicken addict loves it. I make it twice in a month at least.

In this recipe I used Soy sauce and chilli sauce which are store bought. I followed the same procedure as I did for egg fried rice except adding this chilli sauce. The color of the rice is also because of the sauce. Adding tomato ketchup to the recipe is an optional, since I don’t like the flavor of it I skipped adding it. Using vegetables is also purely optional.

Asparagus Chutney Recipe

Asparagus, this word is very new to me a year back. Now I became a fan of this veggie. Once I tried grilled asparagus in an American restaurant, it was awesome. I wanted to incorporate asparagus in my day-to-day recipe. One of my friend suggested me about making chutney with asparagus. So I simply added asparagus with our own style of chutney. Trust me it was a grand success. TH loved it and I made it again in the same week.

I usually have a habit of analyzing about all the veggies before I buy. When I searched for asparagus it went on and on. It has folic acid, anti-aging, reduces the risk for cancer and heart diseases. So why wait!!! Try ur version of this chutney and lemme know the response.

I served semolina biryani along with this chutney. You can also serve this as a thogayal for curd rice.

Orange Lemonade | Orange-Lemon Juice

I make fruit juices very rarely. I feel it is good to take the fruits as such instead of making it as juice. And also for making the juice we add sugar cubes which in turns increases ur blood sugar level.
But whatever the thing is, the delight of taking a juice in this hot-hot summer is such a great pleasure. Even though there is no hot summer here, am sharing this sweat-saving orange lemon juice to quench the thirst...

Seeraga Kuzhambu | Jeera Kuzhambu Recipe

I always make sure to add lots of cumin seeds in my recipes. The reason behind is “it helps in digestion” and most importantly it cures the stomach infections. So at least in a month I try to make this kuzhambu for rice.

This gravy will help you, when u doesn’t have any veggies in hand. I served it on a lazy Saturday with a spoon full of ghee on top along with Appala Kootu which makes the perfect combination.

Chettinad Style Chicken Soup | Kozhi Rasam

For each and every meal we start with a soup variety and for a non-veg addict like me chicken soup would be a whole-some treat. I like mutton soup rather than the chicken. But, near to my place I don’t find any shop for mutton with bones in it. A mutton soup won’t taste better without a bone. So I switched to chicken. If u need to try mutton soup jus replace it. The ingredients and the method are the same.

Always serve the soup literally very hot. The spices and the pepper in it will give instant relief for ur running nose and cough. Check my other recipe for running nose.

Instant Ragi Dosa | Finger Millet Dosa

I make this dosa as my breakfast for most of the days. It is easy to cook and there is no fermentation and no grinding process involved. Check out my another recipe for a quick fix Oats Dosa.

Let me first tell the health benefits of ragi which made me to start eating it.
  • Substitute ragi instead of rice and you will find a great difference in ur weight loss. It controls obesity.
  • It can be taken by all diabetic patients; since it has low glycemic index. It results in slow increase of blood sugar level.
  • It can surely be taken in this hot weather. It turns out your body literally cool.
  • It is very rich in calcium, so you can surely replace ur calcium pills with ragi.
  • The rich source of fiber in it controls the blood cholesterol levels.

After knowing all this benefits, who will not follow eating it? Then why wait for… let’s go to the recipe straight away.

Okra fry | Bhindi fry Recipe

Okras/Bhindi/Vendakkai/Ladies finger…. You can call it by whatever name u like. It has its own flavor. I sometimes like to hate it and sometimes hate to like it *smile*
I hate okra in my childhood as like most others. Amma wants to make me eat some way or other. She used to stir fry the okras with little of oil and adds lemon juice, pepper-salt to it. Weirdly, I love to eat okra with the sticky part in it.

When talking abt the health concerns about okras, we all knew it increases ur memory power of the brain. I’ve heard dat the slime part of this okra’s is the one which works on the brain to increase its memory. May be that was the reason for me eating the okra without removing the slime.

Woof… I have written lots about okra and now let’s move on to the recipe.
I served it with coconut rice.
